ABOUT THE WINERY:
Domaine du Bouchot is a fundamental cellar in the history of the development of Pouilly Fume wines: it is in fact the first Domaine in the region to obtain certification in 2009, the driving force behind the path that led to the creation and recognition of the denomination itself. At the helm of the estate is a very talented and devoted “vigneron”, Antoine Gouffier; previously Antoine has worked in South Africa in various wineries, and is then a great friend of the one who is considered as one of the greatest interpreters of the Sauvignon blanc grape of these areas, Duncan Savage. Antoine took over the Domain du Bouchot in 2017, and in a few years he managed to raise the quality level considerably compared to the previous management. There are fifteen parcels of vineyards owned scattered within the denomination, where the vines grow with biodynamic cultivation methods, recognized and certified by both Demeter and Biodyvin. This approach makes it possible to bring qualitatively “pure” grapes to the harvest, which are processed in the cellar as little as possible, following the principle that the less you do the better, in order to create respect for the terroir of origin. Undoubtedly wines to try, to delve into Antoine’s world and witness a growth that, we are sure, will lead the Domaine du Bouchot to acquire an increasingly important blazon over the next few years.
