ABOUT THE WINERY:
The Domaine Bernard Defaix is located in the heart of Chablis, on the left bank of the Serein river. Led by Bernard himself and by his sons Sylvain and Didier, who have reached the fourth generation of winemakers, the Domaine obtained organic certification in 2009, but in reality the attention to nature and the centrality of the vine represent the company focus already from a long time before . In fact, family traditions have been handed down from father to son for four generations.
Today the Domaine Bernard Defaix extends over a vineyard area of about 25 hectares, in which some parcels can boast the classification as Premier and Grand Cru – among these we remember above all the Chablis “Vaudesir” and “Bougros” -. Obviously, among the rows of vines the symbolic vines of French Burgundy are grown, namely pinot noir and chardonnay, with a small percentage destined for aligotè.
In the daily work in the vineyard there is also a biodynamic approach aimed at maximum protection of the vineyard, in the treatment of which the use of synthetic chemicals and herbicides is avoided. What Didier baptizes as “natural philosophy” is therefore practiced, implementing prevention techniques or ingenious systems, such as the “sexual confusion” method, which limits fertilization among harmful insects, thus eliminating the deposition of larvae and the proliferation of negative for the perfect growth of the vine. In the cellar, much attention is paid to the use of wood – only some wines of the Domaine make wine and are aged in barrels, while most are worked in steel – and particular attention is paid to aging on the lees, carried out both with bâtonnage and with pumping over without contact with the air, when the wines acquire roundness and greater structure.
